Yummy, inexpensive and fool proof. What else could you ask for?
Ingredients
boneless chicken breasts (can also use bone-in, just cook longer)
1 cup plain yogurt
1 can organic cream of mushroom soup
1/2 cup cooking sherry (substitute grape juice or leave out if needed)
1 cups mushrooms
Egg Noodles or Rice
Preparation
· Place the chicken breasts in a glass casserole dish
· In a mixing bowl, add the yogurt and 1 can of mushroom soup. Mix together.
· Fill the empty mushroom can 1/2 way with cooking sherry and add to the mix. Whisk together until smooth. note: some interstitial cystitis patients can tolerate cooking sherry. If you can't, try pure organic grape juice or leave this out altogether
· Add 1 - 2 cups of mushrooms (or 1 jar button mushrooms), stir gently and pour over chicken
· Bake at 350 for about 40 minutes - or until it is browned and bubbling (you may need to adjust the time based on # of chicken breasts)
Serve over egg noodles or rice.
