If you like the taste of salt and barely popped popcorn kernels, then you will love “popped” wild rice. Eat it as a snack or sprinkle it on top of salads or sautéed kale.
Rice was such a staple for us when we were first diagnosed with interstitial cystitis that I thought we'd share this little treat with you.
Did you know that you can “pop” wild rice just like you do popcorn? Seriously, it pops just like popcorn. And while it doesn’t get as big and fluffy as popcorn, it’s still a tasty treat Eat it as a snack or sprinkle it on top of salads or sautéed kale.
Preparation
- Heat a saucepan over high heat. Add 1/2 to 1 tsp organic coconut oil.
- Test to see that the oil is at the right temperature by dropping in 1 seed of wild rice into the oil. If it sizzles its ready. Add 1/2 cup wild rice, shake pan to thoroughly coat the rice, cover, reduce heat to medium high, and shake pan until you can hear the rice popping. (It will NOT sound like popcorn popping; rice makes a lot less noise)
- Reduce heat to medium low and keep shaking until the popping slows.
- Sprinkle with salt to taste.
