Quick South Asia Mango Cake. Mango is a vitamin C rich food which many IC'ers can tolerate.
Ingredients:
1 cup all purpose flour
1 cup fresh Mango puree (you can also use banana puree if they don't bother your bladder)
1/2 cup melted Butter (vegan version use coconut oil)
1/2 cup Sugar
1 teaspoon Baking powder
½ tsp ground cardamom
¼ cup chopped nuts, raisins(optional)
Directions
- Pre-heat the oven to 375 degrees.
- Mix the flour with sugar, cardamom, nuts(optional) and baking powder.
- Next add oil (or melted butter) and mix well.
- Finally add the mango puree and mix again. Let it sit for 10 minutes.
- Place in the oven and bake for 30-35 minutes. Be careful and keep a close watch after 25 minutes.
- Check with a fork to see if properly baked. If the knife comes out clean then remove immediately.
To serve: Slice and top with raisins.
