Plantains are a member of the banana family, but are lower in sugar content, starchier and tend to be used more like a vegetable than a fruit. When sliced and fried, these "vegetable-bananas" make a great appetizer.
Plantains are Highly Nutritious and are a good source of Fiber, Potassium and Vitamins A & C. Unlike Bananas which are eaten raw, plantains need to be cooked or processed. In the Caribbean, Latin America and Africa, plantains are used as a vegetable in many savory recipes.
Plantains are sold in the fresh produce section of the supermarket. They are longer than bananas and have much thicker skins. When allowed to ripen to an almost black color, they will become sweeter and less starchy.
Ingredients
Ripe plantains, sliced ½” thick
Coconut oil
Salt / Pepper
Directions
- Heat coconut oil in skillet on medium high heat.
- Place cut plantain slices in the oil and fry for about 2 minutes. Flip over and fry the other side for 1 minute.
- While still frying take a spoon (or similar) and mash each plantain somewhat flat, fry for 1
more minute. - Remove from skillet and place all the plantains on a thick layer of paper towels.
- With another layer of paper towels in hand, press to flatten and remove excess oil.
- Add Salt and Pepper to taste
