Pureed Sweet Potatoes with Coconut Milk. Amazingly easy and delicious, this silky sweet potato recipe makes a great side dish.
Ingredients
6 large sweet potatoes, peeled and chopped
1 can (14 ounce) organic coconut milk (non organic uses sulfites and other preservatives)
2 tsp powdered ginger or a thumb size of fresh grated ginger (some IC’ers can do powdered but not fresh and vice versa)
1 tsp True Ceylon Cinnamon (some IC’ers can not do “fake” cassia cinnamon)
2 tbsp organic coconut oil or butter
Sea salt and fresh ground pepper to taste
Directions
Boil sweet potatoes for about 15 minutes
Place in food processors with remaining ingredients and puree.
