One of the easiest recipes for eating a young coconut is to make a tasty smoothie. The smoothie is simply the water from the young coconut blended with the soft jelly like white inner meat.
It's so hard to find something satisfying to drink when you have Interstitial Cystitis. Thankfully, Coconut water is here to the rescue. Preparation Instructions:
- Cut off the top of the young coconut. We usually lay the coconut on it's side and use an old knife and a hammer. If you've got a machette or a cleaver, that'll work too.
- Pour the coconut water into a blender.
- Using a spoon, scoop out the soft flesh from inside the coconut and add it to the blender. Don't worry if some of the lining from the inner shell comes out too because it adds a nice hint of cinnamon flavor.
- Blend and serve as is or you can doctor it up by adding ice, strawberries, blue berries or whatever you like. If you want to be adventurous, try adding an avocado, carob powder and maple syrup. You just might be pleasantly surprised!
